Seems like you're making use of a Display/Simple Table as a data container rather than for display purposes. This is not recommended, since display elements usually have performance and memory overheads.
Since you're using choosers, you could have the chooser contain the data and display the first Text field in the relevant data structure/database record (see stage 13 of the tutorial for an example).
Note that you can place a data structure in any display element and they will maintain the data without displaying it, and have it accessible.
