The layout of Tersus applications can be highly customized, as witnessed by the fact that this site is implemented using a Tersus application.
The tutorials address certain aspects of the platform, but of course not everything, and I agree that design-wise they could be improved.
To address the specific example you mention, just place your rows in a Display/Grid, and the controls will become aligned, divide the controls among the rows to have a different layout. See for example this thread.
